The color has excellent heat stability, good light stability and fairly good acid stability. This makes it suitable for use in a variety of applications, such as including ice cream, yogurt, fruit bases, powdered and liquid beverages, and confections.
It is less than one-fourth the cost-in-use of ordinary saffron and, since the only ingredients are saffron and maltodextrin, the product has a very clean label.
The recommend starting usage levels are 0.001% w/w to obtain a pale yellow, 0.005% to obtain a bright yellow and 0.1% to obtain a tangerine hue.
