Food-Grade EDTA Application Guide

This new application guide describes how Versene food-grade EDTA chelating agents can be used to prevent trace metal reactions in food and beverage applications. When trace amounts of soluble copper, iron and other metals react with food products, the flavor, quality, appeal and shelf life can all be affected.

Trace metals occur naturally in plant and animal tissues, are normally found in process water, and can be introduced by processing equipment. Versece food grade chelating agents inhibit unwanted metal catalyzed reactions by forming complexes with metal ions. The agents are used to effectively control metal ions in a wide variety of food products such as beverages, canned vegetables, seafood, pickles, salad dressings, mayonnaise, sauces and spreads.

The company offers two food-grade EDTA products: Versene CA and Versene NA. Versene CA is a highly purified calcium disodium EDTA and Versene NA is a highly purified disodium EDTA. Both of these chelating agents form highly stable complexes with metal ions at low concentrations.
