- Effective at lower temperatures ( 60EC) as compared to other amylase enzymes.
- Effective in lower pH food systems as compared to other amylase enzymes.
- Rapid reductions in starch solution viscosity.
Validase FAA 40 is a food grade alpha-amylase produced by the fermentation of Aspergillus oryzae var. It is characterized by both dextrinizing (liquefying) and saccharifying (glucose and maltose liberating) actions on gelatinized starch molecules.
