N/Aarch and Chemical featured its new starch and dextrin ingredients in booth #5412 at IFT. This year, the company introduced a frozen cactus cooler with new Textra Plus starch in it. Pre-show test recipes indicated a rich, creamy mouthfeel and clean flavor release can be achieved with this cold-water-soluble, tapioca starch. Because it disperses easily and quickly, the starch is said to be suitable for beverage applications.
The company also featured a salsa made with Novation 2600 functional native starch, tortilla chips made with Novelose 240 resistant starch, and a cheese dip made with Textra modified starch and Thermflo waxy maize starch. A spicy chili made from an award-winning recipe also was served.
