The new Coyote Star Technology is said to create extremely easy to disperse and fast hydrating gum systems. The process changes the structure and rheology of the gums and gum systems to produce unique stabilizing systems. Marketed by Gum Technology and SpiceTec-USF under the Coyote Star brand, these stabilizers are described as having a broad range of application. Available immediately are XanPlex, xanthan processed through the technology, and GumPlete and GumPlex which are stabilizer blends processed through the technology.
