D. D. Williamsons Caramel Coloring No. 108 is an acid-proof type of coloring used in root beer, cherry cola and grape beverages. It is also used in alcoholic beverages such as rum, brandy,wine and vermouth. While all caramels are "brown", No. 108 is of particular value for those food and beverage products where reddish-brown shades are desirable.

Color intensity increases and pH decreases with age. Liquid caramel color viscosity increases with age as well; however, the product typically will remain fluid for a minimum of 2 years under normal storage conditions in unopened containers.
