Description:
A double-acting chemical leavening product that is designed to give dependable, high-quality leavening of many baked goods in bakeries, restaurants, and institutions.
Ingredient Statement:
Contains food-grade cornstarch, sodium bicarbonate (baking soda), anhydrous sodium aluminum sulfate, and monocalcium phosphate.
Use Level:
Has the same carbon dioxide gas release as the majority of double-acting bakery/institution-type baking powders. Use typical amounts. For very light products you may need 6% or a little more.
Leavening Action:
Leavening carbon dioxide is released by reaction of the sodium aluminum sulfate and monocalcium phosphate in the presence of moisture. About 30% is released at batter temperature, and the rest is released in the oven. The double action increases nucleation during mixing and provides excellent bench tolerance. These result in light products with fine cell structure.
Mineral Content:
Calcium content typically is 2.1%. Sodium content typically is 10.9%.
Moisture:
The free moisture content is typically less than 3.0%.

May be listed as "baking powder" or "leavening" followed by the ingredients (cornstarch, sodium bicarbonate, sodium aluminum sulfate, and monocalcium phosphate).
