Crystalzyme 100XL is a food grade pectic enzyme system obtained from a non-genetically modified strain of Aspergillus niger. These enzymes hydrolyze both colloidal and soluble pectin substances. The colloids formed by pectin are thereby destroyed and the viscosity of the juice is reduced. Crystalzyme 100XL also contains arabinase activity sufficient to hydrolyze the arabans in most fruits (high araban fruits such as pears may require the addition of Crystalzyme APXL).
