In booth #3367, this supplier introduced its all-natural Blueberry Crystals, the latest in its line of freeze-dried fruit powders. Developed in response to the growing market demand for functional ingredients, the Blueberry Crystals are produced from a blend of concentrate and puree using a low-heat vacuum freeze-drying process. The resulting ingredient is said to have a 50% juice content, excellent solubility, fresh flavor, high nutritional content and plentiful natural color.
The supplier suggests using the fruit powders to add juice content and flavor to confections, dry beverages, bakery foods and other food products. The crystals remain free flowing at ambient temperatures and can be used to replace liquid juice concentrates.
