The soy lecithin currently used in chocolate products, extruded fillings and wafers now can be replaced with Nu-RICE, a natural extract from rice bran.
Nu-RICE binds the fat components with other ingredients of chocolate, extruded fillings or wafer formulations. In chocolate products the emulsifier minimizes fat bloom.; in extruded fillings it decreases stickiness and improves product texture; in wafer products Nu-RICE eliminates the lecithin build-up on the molding plate and improves product release while increasing wafer expansion.
Nu-RICE is a natural, non-GMO ingredient that can be used in organic products and complies with Kosher Parve and Halal requirements.
