Gourmet Club Corpnew forms of green peppercorns, powder and granular, are now available as part of the company's line of green and pink peppercorn products. Major ingredient uses include flavorings for mustards, sauces and dressings, seasonings for frozen foods, meat products and rubs, and cheese. Harvested while still unripe, green peppercorns provide a fruitier flavor than black pepper, though still somewhat pungent. The green pepper is cleaned, washed, hand selected, and steam blanched to reduce micro levels. From there it can be packed in brine, individually quick frozen (IQF), mechanically air-dried or freeze dried, depending on the application.
