TIC Gums, Inc.a new line of ingredients combines guar gum and cellulose gum to suspend and stabilize dairy containing beverages and other food products. The supplier originally developed the stabilizer for a manufacturer of instant cappuccino drinks that needed a low-cost thickener with the protein reactivity of cellulose gum. The product has virtually none of the grittiness sometimes associated with guar, and also is said to contribute a low degree of opacity. Applications include dairy beverages, milk-based ices and sorbets.
