GumPlete Hydrocolloid Blend
The functionality of the stabilizer can be altered by manufacturing processes, including particle size and manipulation, to allow the company to create a product which can be custom manufactured to a client's exact specifications. The gum is currently offered in standard grades labeled "F", "M", and "C". The different grades will hydrate and disperse differently and have slightly different textural properties.
GumPlete is cold water hydrating although it can be dispersed in hot, even boiling water. It has been used in products as varied as smoothie type beverages, fruit variegates,. Guacamole dip, salad dressings and mayonnaise, pizza sauce, and dry powdered drink mixes. It also finds use in frozen foods and pot pies, among many other uses. It provides a smooth, viscous texture and has the ability to control synerisis and freeze-thaw.
The product is packed in 35-50 lb. poly-lined cartons depending on grade (mesh size). It should be stored in a cool, dry area for no more than 9 months.
