GumPlex Hydrocolloid Blend
The functionality of the stabilizer can be altered by manufacturing processes, including particle size and manipulation, to allow the company to create a product which can be custom manufactured to a client's exact specifications. The gum is currently offered in standard grades labeled "F", "M", and "C". The different grades will hydrate and disperse differently and have slightly different textural properties.
GumPlete is cold water hydrating although it can be dispersed in hot, even boiling water. It has been used as a low cost alternative to xanthan and other stabilizers in a wide range of products including sauces and gravies, pizza and other acidic sauces and dry powdered drink mixes. It also finds use in frozen foods and tortilla and other baked goods for moisture retention and freeze-thaw control. It provides a viscous texture and has the ability to control synresis and freeze-thaw.
The product is packed in 35-50 lb. poly-lined cartons depending on grade (mesh size). It should be stored in a cool, dry area for no more than 9 months.
