Beverage formulations continue to increase in complexity. Some products contain fruit solids, added protein, fiber, or even minerals. Hydrocolloids such as pectin, carrageenan, cellulosic gums and ester gums are said to help product developers suspend particulate ingredients, improve the stability of added proteins and enhance the mouthfeel of low-soluble-solids beverages.
