These ingredients are used as binding agents in foods that traditionally relied upon binders such as egg whites. The super gel food gums allow manufacturers to produce products such as onion rings, hors d'oeuvres, sauce-filled appetizers and some vegetable-based foods without using egg whites while still using an ingredient made entirely from cellulose obtained from plants.
