Validase Fungal Lactase Concentrate is a food grade lactase enzyme (E.C. 3.2.1.23 beta-D-galactoside galactohydrolase) derived from the controlled fermentation of A. oryzae. The lactase catalyzes the hydrolysis of the lactoose beta-D-galactoside linkage in lactose liberating one mole of D-glucose and one mole of D-galactose. Validase Fungal Lactase Concentrate is characterized by its ability to hydrolyze lactose over a wide range of temperature and pH.
