These are non-crystallizing solutions with a caloric value of 3 calories/gram on a dry basis. Maltitol is very similar to sucrose in taste and sweetness, so high intensity sweeteners are not required.
Maltitol's taste complements fruit flavors better than other polyols with high cooling effect.
End uses include cookies and cakes, cream centers, dried fruit, fillings, frozen desserts, fudge, gum, gummi candies, hard candy, health bars, jams and jellies, pancake syrups, sauces, soft confections and sports beverages.
It is inert and can withstand high temperatures without browning. Maltitol cannot be metabolized by most oral bacteria so it does not promote tooth decay. Maltitol is slowly absorbed and has a significantly reduced rise in blood glucose and insulin response: it can be a useful alternative for people with diabetes (on the advice of their doctor). Maltitol has a lower laxation potential than most polyols: up to 100 grams/day can be consumed without problem.
