Cashmere ML 140

This well-balanced milk chocolate is also our most popular. An all-time favorite for a variety of applications.

Windsor M 140

A silky smooth milk chocolate with a slightly caramelized note. Great on its own or with a slightly salty center.

Lancaster D 135

A robust, yet well-balanced milk chocolate. Great for centers that demand a strong chocolate impact.

Medo-Gold D 170

A slightly higher viscosity in this well-balanced premium chocolate is perfect for panning or solid molding.

Alpine ML 140

The same flavor characteristics as Medo-Gold in a reduced viscosity.

Sable ML 85

This has the same well-balanced attributes as our cashmere in a reduced viscosity...perfect for hollow molding.

Cupid ML 155

A classic in our premium line of milk chocolates. The slightly heavier viscosity makes in handy for enrobing or molding.

Color Viscosity

Bronze Medal D 145

Our most popular semi-sweet chocolate with a strong chocolate impact. The added milk fat makes it bloom resistant and definitely a winner.

Scarlet D 150

A somewhat milk, yet aromatic dark chocolate. A versatile product for a variety of applications for the baker and confectioner.

Velvet VD 170

Our darkest semi-sweet chocolate with strong Dutched characteristics. Also bloom resistant.

Brandywine VD 100

The high liquor content and minimal sweetness in this product complements a very sweet center or is perfect for many baking applications.

Warwick D 120

A dark, sweet chocolate with a hint of bitterness. Versatile for both baking and candy applications.

Empire D 120

A sweet, dark chocolate at an economical price.

White Chocolate Coatings

Wilbur's white chocolate coating is cocoa butter based and possess just the right degree of sweetness.

Platinum 2000

A clean taste made with the deodorized cocoa butter and complemented with a pleasant vanilla note.

Sugar-Free Coatings

Wilbur's sugar-free coatings are sweetened with maltitol and are cocoa butter based. They require tempering and handle in a fashion very similar to real chocolate.
