MPC 42 is a free-flowing spray-dried milk protein powder that can be used as an economical replacement for non-fat dry milk, according to the manufacturer. The cost savings are realized because the milk protein concentrate is used at only 75% to 85% of the NFDM level. In addition, the concentrate is said to offer functional benefits.
In confections, for example, the milk protein concentrate contributes emulsification, foam stability and water binding. Formulators also will see emulsification and water-binding when the concentrate is used in bakery foods. The ingredient also helps increase volume in these products.
