Organic Whole Cane Sugar
Costa Rica is not the exception to this trend. Refined bleached white sugar is commonly used nowadays as the most practical sweetener in the market. Before, this tendency and throughout our colonial years people used to sweeten their foods and drinks by concentrating cane juice and later solidifying it. This product is known as "Tapa de Dulce" (Sweet Block was the only sweetener that could be stored for later use. In other latitudes this product has been known as "rapadura, moscavado, panela, shankar, papelillo, papelon, chancaca".
The sugar cane we use in our product is planted in the highlands of the Atlantic region of Costa Rica, in fields highly fertile and with excellent rain patterns. After 12 - 14 months, the cane is cut and the juices are extracted. By means of evaporation, the water is extracted without bleaching the product. Therefore all the natural sweeteners, vitamins and minerals are concentrated. Afterwards this paste is granulated through a patented process and neatly pack for its distribution. This manufacturing process holds most of the original steps and procedures our forefathers used; hence it is certified as a whole and natural product.
