Marinades, salad dressing mixes, and seasoning coatings for snacks are just some of the applications for powdered shoyu (Japanese soy sauce). The free-flowing powder is made in special drying towers that preserve the shoyu's volatile flavor compounds, according to the manufacturer. Applications also include baked applications, meat seasonings, and cheese sauces or other industrially rehydrated sauces.

The powder is light and easy to store, and can replace liquid shoyu in some mixing systems. Application rates for the powdered shoyu range from 1%-2% of a food product formulation as a flavor enhancer and up to 10% in certain dry mixes for Asian-style foods. The product is kosher certified and is available in 50-lb bags.
