The flour is precooked so it requires no additional cooking when used in a food product. It has a yellow color and a familiar corn-like flavor and aroma. The product contains no chemical additives.
The flour may be used in fig and fruit paste as a moisture-retaining agent and/or extender. It can also be used as a binding agent in extruded, baked products such as corn chips, and may replace higher priced pre-gelatinized starches.
