The Research Microbiolgy department has a long history of providing expert research and consulting services to the food and allied industries in the areas of microbiolgical safety, quality, and preservation of foods. Our department is comprised of unique instrumentation and knowledge that allows us to address most areas involving food science and safety. This allows us to join in with other departments to solve problems and provide answers that are focused, responsive and cost effective.

The type of projects this group focuses on includes, but is not limited to the follwing list of topics:

  • Inoculated and non-inoculated shelf-life studies
  • Disinfectant efficacy studies
  • Sausage validation studies
  • Problem solving
  • Campylobacter testing
  • Staphylococcus enterotoxin testing

    This technical group focuses on contract research projects, problem solving, and consulting services in the area of food preservation and microbiological safety of food and beverages, i.e.; meats, poultry, seafood, dairy, fruits and vegtables, juices, minimally processed/preserved and refrigerated products, etc. Specifically, our capabilities include the investigation of the effects of a wide variety of microbiological barriers including:

  • Temperature
  • Acidulants
  • Water activity
  • Antimicrobial agents
  • Starter cultures
  • Packaging strategies
  • Thermal processing
  • Intervention strategies
