Recent trends, such as the inclusion of soy protein and herbal extracts in foods and beverages, have given a new perspective to the role of flavorings. Normally used to impart a characteristic taste, flavors are now also expected to solve physical or chemical problems related to the finished product. In keeping with this idea, WILD Flavors, Inc. has developed proprietary Resolver™ Technology that blocks bitter and other undesirable aftertastes.

Off-flavors can be caused by naturally occurring compounds or by chemical reactions during processing or storage. Ingredients that often contribute bitter notes include artificial sweeteners, preservatives, vitamins, nutraceuticals, and caffeine. Soy-based products commonly contain off-notes, while pre-cooked meats can taste "warmed-over."

Flavors are used to mask objectionable tastes. The Resolver™ Technology actually utilizes water-soluble natural botanical extracts that effectively block the perception of bitterness at the taste-receptor site in the mouth. These natural extracts and ingredients have typically been used to block bitter tastes but WILD has determined Resolver™ Technology is effective for almost any product containing off-notes.
