Small pasta shapes are ideal for soups, kids' meals, and side dishes. Ditalini, tubettini, and flakes remain soup favorites. Stars, pretzels, and triple O's are tops with kids. Use cut vermicelli and orzo in side dishes, alone or with rice. Egg white can be added to these shapes to improve cooking quality, particularly in retort applications.
