End Uses include cereal coatings, cream centers, deposited hard candy, dried fruit, icings and fillings, fondants, frozen desserts, gum, jellies, sauces, sausage, shredded coconut, and soft confections.
Sorbitol is affirmed GRAS under 21CFR: 184.1835. Sorbitol is inert and can withstand high temperatures without browning. Sorbitol cannot be metabolized by most oral bacteria so it does not promote tooth decay. Its caloric value is 2.6 calories/gram on a dry basis. Sorbitol is slowly absorbed and has a significantly reduced rise in blood glucose and insulin response: it can be a useful alternative for people with diabetes (on the advice of their doctor).
