Sorbogem Crystalline Sorbitol is the most affordable and most widely used sugar replacer for solid applications where you need to replace the functionality of sucrose.

At 2.6 calories per gram, it will help formulate both reduced calorie and light foods. It is also a great humectant, and can function as cryoprotectant, crystallization inhibitor, freeze point depressant, and plasticizer.

It is 60% as sweet as sucrose and has a pleasant cooling effect that accentuates vanilla and mint flavors. End uses include baked goods, coated nuts (adhesion), cream centers, frozen desserts, fruits (frozen or powdered), gum, icings, mints, pan coatings, soft confections, and surimi.

Sorbitol is affirmed GRAS under 21CFR: 184.1835. It is inert and can withstand high temperatures without browning. Sorbitol cannot be metabolized by most oral bacteria so it does not promote tooth decay.
Sorbitol is slowly absorbed and has a significantly reduced rise in blood glucose and insulin response: it can be a useful alternative for people with diabetes (on the advice of their doctor).
