Product Description:
Graceland Fruit's Soft-N-Frozen products are excellent natural fruit based ingredients for use in ice cream, sorbet, yogurt, and other frozen desserts. The fruit is soft and scoopable even when frozen. The process consists of in-pail retort processing a blend of fruit and a stabilizer matrix containing sugar and natural stabilizers. The process maintains fruit piece integrity, natural color, flavor, and texture.

Specifications:

  • Fruit Content - 50% to 80%
  • Sugar Solids (Brix) - 24º to 45º Brix
  • Typical Usage - 15 to 20% referenced against Ice Cream Mix

Microbiological:

  • S. P. C - <500 cfu/gm
  • Yeast & Mold - <100 cfu/gm
  • Coliform - <1MPN/gm
  • Salmonella - Negative

Packaging:
Products shipped in 40, 42, or 45 lb. plastic pails.

Shelf Life & Handling:
12 months stored at 0º F or below. Thaw to a semi-solid consistency at 35º - 45º F for about 48 hours prior to use.
