Maltose is a disaccharide with a molecular weight identical to sucrose, but it is only 30% as sweet. It is spray dried and has excellent flow properties
Maltose is a disaccharide with a molecular weight identical to sucrose, but it is only 30% as sweet. It is spray dried and has excellent flow properties. It truly functions like sucrose except for a much lower melting point of 120-125C. This gives it an interesting benefit: it can be used as a powder on top of bakery products where it will melt during baking and yield a nice glossy, non-tacky coating! This is ideal to adhere particulates on top of bakery products!
It is also used to reduce sweetness in applications where the functionality of sucrose is needed, but not the sweetness: this includes savory batters and reduced fat products that tend to be too sweet. An anhydrous form is available for applications like chocolate.
Maltose has only half the osmotic pressure of glucose so it provides twice the available energy in sports drinks compared to glucose.
Additionally, maltose is considered a food, so it is not subject to limitations like additives.
