Waxy Maize Starch

New NOVATION 2700 native waxy maize starch has been introduced for food systems that encounter low to moderate temperature and shear conditions. When this thickener is included in a food system, the label declaration is simply cornstarch. This functional starch cooks easily and produces high viscosity suspensions. When cooked, NOVATION native starch imparts a smooth, heavy-bodied texture and does not set to a gel upon cooling. Its texture closely resembles modified starches. In addition, the high viscosity levels may allow a reduced usage level when compared with some traditional modified starch and most native starches or flours. Food processors may add boiling water to NOVATION 2700 starch, use it in stove top preparations and include it in dry mixes destined for reconstitution in a microwave oven.
In some food systems, NOVATION 2700 starches allow the rapid release of flavors, providing the NOVATION 2700 starch opportunity for flavor improvements or reduced flavor usage. The flavors of the food systems formulated with NOVATION 2700 starch are said to be brighter when compared with traditional modified starches and most native starches or flours. These advantages enable food formulators to successfully use NOVATION 2700 starch in a variety of foods such as dairy foods and delicately flavored sauces. Other successful applications include puddings, desserts, gravies, and soups. This versatile thickener will also serve well for many food service applications because of its flexibility and steam table stability.
Since NOVATION 2700 starch can be labeled cornstarch, it is ideal for products will bear organic or natural promotional language. This waxy maize starch also meets National Food Processors Association Standards for thermophilic spores.
